Introduction
This is a filling for the low carb almond flour crust I make. I have to say this was a big success and I feel the mustard really took this from great to amazing! Make it your own and enjoy! (See my low carb crust recipe if you want a low carb pie crust) NO MORE CRUSTLESS QUICHES! lolsss This is a filling for the low carb almond flour crust I make. Ingredients
-
8 eggs
1 cup cream
2 medium baby zucchinis sliced very thin
1 small to med onion cut to your liking
1 lb or so of ground sausage (or your fav ground meat)
3/4 cup shredded cheese (cheddar used here)
mustard to spread along the prebaked crust (see my low carb crust recipe)
seasonings: I like to add garlic powder, salt, pepper, and paprika to the top for pretty color. Also I seasoned the zucchini when i precooked that.
Directions
Start with a double recipe of my low carb pie crust recipe and prebake for 10 mins @ 375 degrees (score the middle to keep shape) .
spread dijon or spicy mustard along the crust before filling any ingredients.
Preheat oven 350 degrees.
This is a casserole family sized recipe, but can be halved into a pie plate. Cook and reserve separately the zucchini, sausage, and onion. In a bowl mix your egg and cream with a whisk or fork. Toss your cooked meat and veggies in a bowl and then fill evenly into crust. Pour over your egg and cream mixture and sprinkle with shredded cheese. Season the top for color and extra flavor if you wish. Please feel free to modify this and enjoy it YOUR way!
