Introduction

Number of Servings: 8

Ingredients

    1 can Pink Salmon
    1 can of Black Beans
    2 cups of Sweetened Corn
    2 tbsp EVOO
    Peppers and Onions (optional)

Directions

1. Add salmon to medium sauce pan, let cook for 5 minutes or so to "toast"
2. Add 1 cup of water and 2 tbsp of tomato paste bring to a simmer - add seasoning to taste
3. Add onions and peppers
4. Let simmer over low heat for 10 minutes to thicken the sauce and allow flavors to blend.

Serving Size: makes 6-8 1 cup servings
