Introduction

Number of Servings: 6

Ingredients

    Spinach 1lb. frozen
    1/2 large onion
    1 TB. crushed and chopped garlic or more to taste.
    1 cup salsa
    3 cups cooked black bean or other
    1 8oz. can tomato sauce
    1 cup chicken broth
    1lb. ground turkey
    2 TB. Cumin
    Salt and chili powder to taste

Directions

Sautee onion, garlic and turkey then add spinach.
Add cumin and salt to mixture above. Sautee about 5 minutes or so it's simmering a little bit.
Add all the other ingredients bring to a boil and then simmer on low heat about 15 minutes more.

    Very filling! I love the fact that I'm getting in some veggies with the spinach. I used pintos and black beans - lots of fiber! - 1/13/08
