Introduction

Ingredients

One package (160z) Speckled Butter Beans
4 tbsp of butter (can be replaced for lower fat)
Curry Powder - about 1 tbsp
Ground Ginger - about 1 tbsp
Nutmeg - a couple of dashes
Ground Cloves - a couple of dashes
Salt - needed to bring out flavor of beans 2 tsp
Pepper - 2 tsp
Directions
Take a package of frozen butter beans and place in a heavy pot, covering with cold water. Bring to a boil. Boil hard for 3-4 minutes then reduce and simmer for 45 minutes or so.
Halfway through cooking (once beans have begun to soften) season with the spices listed... the amounts I used are approximate and you can add more or less as to your personal taste. About 5 minutes before servings, season again lightly.
This goes absolutely wonderful spooned over cornbread and is very filling... chicken or ham could also be added for a one pot non-vegetarian meal. Substitute with olive oil if you don't want to use butter.
The number of servings will depend on the size bag of beans you buy. One serving is 1/2 cup.
