Ingredients

    6 eggs
    1 c. steamed chopped broccoli
    1/2 c. chopped green pepper
    1/4 c. chopped onion
    2 T. Tofutti Better Than Cream Cheese, in small bits
    1/2 t. salt
    1/4 t. pepper
    2 t. olive oil

Directions

Saute green peppers and onions in olive oil until soft. Beat six eggs then beat in the small bits of Tofutti (try to break it up as best as you can). Mix in salt and pepper. Add sauteed peppers and onions and steamed broccoli.

Spoon mixture into 9 muffin tins lined with papers. Bake in 350 degree oven for 30 minutes or until a toothpick inserted in center comes out clean. Microwave to reheat for a fast breakfast!
