Ingredients

    4 - 3 oz fish fillets
    1/2 cup of cornmeal
    cayenne pepper
    salt
    black pepper
    olive oil

Directions

Mix cornmeal, cayenne (to taste), salt, and pepper. Dredge fillets in mix.

Heat medium skillet over medium-high heat and heat oil. Cook fish on one side for 3-4 minutes, and the other side for 2-3 minutes or until golden brown and fish flakes easily.

Serving Size: 4 fillets
