    2 large eggs
    1/2 cup sliced mushrooms
    1 1/2 oz. ham, sliced and chopped
    1 oz. cheddar cheese, chredded
    olive oil spray


1. Spray pan lightly with olive oil spray.
2. Add mushrooms and ham. Saute over medium heat until mushrooms are lightly browned.
3. Scramble eggs with a little water. Add to frying pan and lower heat. When egg has cooked, top with cheese and allow to melt. Fold over.
4. Serve.

Serving Size: Makes 2 servings - 1/2 each
