Ingredients

    0.25 cup Milk, 1%
    1 large Egg, fresh, whole, raw
    2 tsp Cinnamon, ground
    0.50 tsp Nutmeg, ground
    1 tsp Vanilla Extract
    0.33 cup Applesauce, unsweetened
    1 tsp Baking Powder
    0.50 tsp Baking Soda
    0.50 cup, packed Brown Sugar
    1 cup Old Fashion Oatmeal
    1 cup Sweet Potato, baked
    1 cup Whole Wheat Flour

Directions

Preheat oven to 400 degrees.
In large bowl, combine oatmeal, flour, baking powder, baking soda, cinnamon and nutmeg. Stir in sweet potatoes, brown sugar, oil, milk, egg and vanilla, just until well moistened, the batter will be very thick. That's okay! Fill muffin tins that have been sprayed with cooking spray 3/4 full. . Bake 15-20 minutes.

You can top with an optional crumb topping (not included in nutrition info) Mix 1/4 each of oatmeal, flour, and brown sugar with 1 tbsp softened butter (or substitute butter of your choice) Sprinkle over each muffin just before baking
