Mushroom and Broccolini Frittata with Caramelized Onions and Gruyere Cheese

Ingredients

    -1/2 lb cremini mushrooms, cleaned and sliced
    -1 bunch broccolini, chopped
    -1 red onion, sliced
    -2 tbsp olive oil
    -6 large eggs
    -1 c gruyere cheese, grated
    -splash skim milk
    -salt and pepper to taste

Directions

Preheat oven to 400 degrees.
In a heated 10-inch cast-iron skillet, sauté onions in olive oil over medium heat until caramelized (about 30 minutes). Add mushrooms and stir gently to coat. Allow mushrooms to cook for a couple of minutes before adding the broccolini. Add salt and pepper to taste. Allow the vegetables to reduce, stirring from time to time to prevent sticking. In a medium bowl, mix eggs, cheese, milk, and salt to taste. Pour the egg mixture over the vegetables, about five minutes or so, until the egg mixture has set on the bottom and begins to set on top. Place the skillet in the oven, about 6-8 minutes, until lightly browned and fluffy. Remove from pan and cut into quarters. Serve immediately.
