Introduction

Ingredients

1 refrigerated pie crust
6 eggs
1/4 - 1/3c milk
1c Sharp Cheddar Cheese
1/4c Parmesan Cheese
Vegetable Broth
5oz Baby Spinach
1/2 large onion
Directions
1. Roll out your pie crust and lay it on your pie pan
2. Add spinach and a some vegetable broth to a skillet. Wilt your spinach. Drain and squeeze dry (this is important. Make sure your spinach isn't soggy).
3. Slice onion (your preference as to how big or small). You can also saute this if you don't like raw onion. It won't affect the flavor much.
4. Mix eggs, milk, and cheeses together. I have done this with only four eggs before. Six works better, but if you're short on eggs (like I was when I first tried this), it will still work. Just use less cheese and a little less milk.
5. Add your spinach and onions to the bottom of your pie crust, spread around evenly. Add egg mix on top.
6. Bake according to pie crust instructions OR at 350 for 30 minutes (or until egg is cooked).
Serving Size: makes 8 slices
