Introduction

Once these are cooked, I pop them like they are candy. Look for mini peppers that have a variety of fun colors. They get really sweet when they roast. Use them on salads, in hummus, in the middle of a turkey roll-up, or just eat them plain! Once these are cooked, I pop them like they are candy. Ingredients

Mini Bell Peppers- 1 Bag, or 1lb., washed and left in tact.

Directions

1. Wash and dry peppers.
2. Spread them on a cookie sheet, or on a toaster oven sheet if you are making less.

    Incredible!
Wow; this recipe was SO simple & delicious! I was skeptical about leaving the seeds and stem intact while roasting, but the mini peppers were so tender and easy to eat, seeds and all. I also liked the healthier option of spraying the peppers w/cooking spray (I used olive oil spray). - 2/10/13
