Once these are cooked, I pop them like they are candy. Look for mini peppers that have a variety of fun colors. They get really sweet when they roast. Ingredients

Mini Bell Peppers- 1 Bag, or 1lb., washed and left in tact.
Cooking spray
salt and pepper to taste
Pre-heated 400 degree oven or toaster oven if making less than the whole bag of peppers
Directions
1. Wash and dry peppers.
2. Spread them on a cookie sheet, or on a toaster oven sheet if you are making less.
3. Spray them lightly with non-stick cooking spray
4. Sprinkle salt and pepper to taste on top
5. Bake at 400 degrees for 15 minutes
6. Let cool and eat. These will keep up to 2 weeks in the fridge, but I bet they will never last that long!
Serving Size: Makes as many servings as you have peppers!

Wow; this recipe was SO simple & delicious! I was skeptical about leaving the seeds and stem intact while roasting, but the mini peppers were so tender and easy to eat, seeds and all. I also liked the healthier option of spraying the peppers w/cooking spray (I used olive oil spray). - 2/10/13
