Introduction

Low Carb (only 11 carbs) Muffins made with Soy and Almond flours. Feel free to use any fruit you like (blueberries, raspberries, apples, etc.) and adjust the nutritional value accordingly. Ingredients

    1 cup Almond Flour, Bob's Red Mill
    1 cup - Soy Flour, Bob's Red Mill
    2 tsp - Baking Powder
    1/4 tsp - Salt
    1/3 cup - Splenda
    1 tbsp - Splenda Brown Sugar Blend
    1/2 cup - Butter
    4 large eggs
    1 tbsp - Heavy Whipping Cream
    1/4 cup - Water
    1.5 tbsp - Daisy Light Sour Cream
    1/4 cup - Banana, mashed
    1 cup - Strawberries, fresh sliced or diced
    1/2 cup - Hersey's Premium White Chocolate Chips

Directions

**Preheat oven to 350°F.**

1) Line muffin tin with muffin cups.
2) Mix all dry ingredients together well.
3) Add butter, eggs, whipping cream, water and sour cream and mix thoroughly.
4) Add mashed banana and mix thoroughly.
5) Stir in strawberries and white chocolate chips until thoroughly distributed.
6) Fill muffin tins about 1/2 to 2/3 full and bake for about 15 minutes.
