Introduction

Ingredients

    Dry:
    1 C All Purpose Flour
    1 C Whole Wheat Flour
    1/2 C Brown Sugar
    1/2 tsp Baking Soda
    1/2 tsp Baking Powder
    1/2 tsp Salt
    1 tsp Cinnamon
    Dash Nutmeg

    Wet:
    1 Large Egg, beaten
    2 tbsp Melted Butter
    1 C Unsweetened Applesauce
    1 1/2 C Shredded Zucchini (loose, not dry but most of the liquid squeezed off)

    1/2 C Walnuts (optional)

Directions

Preheat oven to 325 degrees.

1. Combine dry ingredients, mix well.
2. In a separate bowl, combine wet ingredients, mix well. Add walnuts if desired.
3. Fold wet ingredients into dry and stir until just blended.
4. Pour into greased bread pan (used 9x5) and bake 45-55 minutes.

*For muffins, bake 25-30 minutes.

Serving Size: Makes 12 thick-cut bread slices
