Ingredients

    1/4 cup butter
    1/4 cup onion
    1/4 cup carrots
    1/3 cup celery
    1 tbsp parsley
    1/4 cup whole wheat flour
    4 cans chicken broth
    3/4 cup milk
    4 oz cream cheese
    1 egg yolk
    2 cups cooked chicken
    1 cup rice
    dash of nutmeg
    1/8 tsp white pepper

Directions

melt butter in 3-4 qt saucepan, add onions carrots, celery, and parsley. saute on low for 5 mins. cover and cook for 10 mins. remove from hear and stir in 4 cans of chicken broth return to medium heat. bring to a boil then reduce for 5 minutes. then blend milk, cream cheese, and egg yolk and slowly add to soup mixture along with chicken, rice, nutmeg, and pepper. heat but do not boil. can also add broccoli.
