Introduction

Preheat Oven to 400 degrees f. Preheat Oven to 400 degrees f.

Ingredients

    42 oz. Chicken Broth
    1 1/3 Cups Quick-Cooking Grits
    1/2 Cup Grated Parmesan Cheese
    1/2 tsp. Salt
    2 Tbsp. Butter
    1 (8 oz.) Brick of Cream Cheese
    1 Tbsp. Half & Half (or Milk)
    1/2 Cup Grated Italian Cheese Blend
    1 tsp. Chopped Parsley Leaves
    1/2 Cup Cooked, Peeled, & Deveined Shrimp, Chopped
    1/2 Cup Shredded Cheddar Cheese

Directions

Bring broth to a boil in a large saucepan. Stir in grits, and return to a boil. Cover, reduce heat & simmer 5 minutes, or until grits are thickened, stirring occasionally. Stir in cheese & salt. Remove from heat. Spoon grits into a greased 9 X 13-inch baking pan. Cover, and chill at least 2 hours, or until firm. Un-mold grits onto a large cutting board. Cut into 48 pieces. Brush a large jellyroll pan with melted butter. Place grits squares on pan. Bake for 15 minutes. Turn grits & bake 45 minutes more. Set aside. (Up to this point, the recipe can be prepared ahead. if preparing early, cover & refrigerate grits squares until you are ready to top with shrimp mixture.)

In a large bowl, combine cream cheese and milk, stirring until combined. Stir in cheese, parsley, and shrimp. Top each grits square evenly with shrimp mixture. Top mixture with shredded Cheddar. Broil 5 minutes, or until lightly browned & heated through.

    48 servings and only 51 calories? It sound delicious but if the servings and calories aren't right it doesn't do much good to be able to add it to our food tracker. :( - 4/4/12
