Introduction

Health quiche that substitutes tofu for some of the egg and cheese and still tastes great. Great for any meal. Health quiche that substitutes tofu for some of the egg and cheese and still tastes great. Great for any meal.

Ingredients

    10oz package frozen spinach, thawed and drained of excess liquid
    6-8oz tofu
    2-3 eggs
    1 Tbsp olive oil
    1 medium onion chopped
    12 button mushrooms sliced
    1/2 cup milk (2%)
    3-4 oz parmesean or other cheese shredded
    1tsp lemon juice
    black pepper and nutmeg to taste

Directions

Preheat oven to 350

1) coat inside of 9*9 pan with small amount of olive oil

2) Saute onions and mushrooms in remainder of olive oil until brown and liquid has evaporated

3) In food processor blend tofu, spinach, eggs, milk, 3 oz cheese, lemon juice and spices

4) layer onions and mushrooms with into pan with spinach tofu mix, with the top layer being spinach. Top with remaining cheese and black pepper

5) Bake at 350 for 45 minutes or until firm. The quiche gets firmer and tastes better as it cools.

Serving Size: make 9 pieces
