Introduction
After having some Lentil Soup at the Cosi Deli, I had to try and make something similar in my crockpot. This turned out pretty well. After having some Lentil Soup at the Cosi Deli, I had to try and make something similar in my crockpot. This turned out pretty well.Number of Servings: 9
Ingredients

1-1/2 cup dry lentils sorted and rinsed
2 cloves of garlic crushed, minced or pureed
1/2 cup carrots finely diced
2 cups frozen pepper and onion blend
2 cups of potatos peeled and diced
1/2 teaspoon ground ginger
1 teaspoon ground cumin
5 cups of water
1 can (15 ounces) diced tomatoes in juice
Directions
Add all ingredients EXCEPT TOMATOES to 3-5 quart crockpot. Stir well. Cover and cook on high for 2 hours or until lentils and potatos are slightly tender. Add canned tomatoes including juice and adjust seasoning if necessary. Cook another 1 to 2 hours or until lentils are completely tender.
You don't want to add the tomatoes until the lentils are mostly done because the acid in the tomatoes hamper the cooking and the lentils (or any beans) will be tough.
Serve over rice or pasta. Or just eat by itself. A dollop of greek yogurt or sour cream adds some extra punch.
