Introduction
I've tweeked my original recipe to make it a little healthier and added some vegetables. The bacon grease is important for the flavor, but I did take it down from 3Tbs to 2Tbs. My husband has always loved my potato soup, but is ok with the changes. You can added shredded cheese and the bacon crumbles if you wish, but it is not calculated in this recipe. Ingredients

2 Tbls. of bacon grease
1 cup of chopped onions (if your in a hurry, use minced)
1 cup of water
2 cans Cream of Chicken (I use healthy request)
2 cans of milk (I use skim if hubby isn't looking ;-))
2 Tbls of parsley (It will look like alot, but cook down)
2 cups chopped potatoes
1cup chopped carrots
1 cup chopped celery
Directions
Fry up some bacon, put 2Tbls of grease in a large pot and fry the onions in it. Add all the other ingredients and simmer until potatoes are done. You can also put this in a crock pot and cook 3-4 hours. I have put all ingredients in a crock pot and taken it to work, it's ready by lunch time to share with co-workers.
Serving Size: Approx 1 cup. There are 1224.8 calories in the whole pot, so divide up according to you caloric needs.
