Ingredients

    1.5 cups Whole Wheat Flour
    0.5 cup plus 1T packed brown sugar
    2.5t baking powder
    1.5t ground cinnamon
    0.25 cup salt
    2/3 cup nonfat vanilla yogurt (i used non-fat plain chobani)
    1/4 cup margarine, melted
    3T 1% low-fat milk (i used unsweetened almond breeze)
    1 large egg, lightly beaten
    1/4 cup sugar free strawberry jam

Directions

1. Preheat oven to 375
2. Combine: flour, 1t of the cinnamon, baking powder, and salt. Set aside
3. Combine: yogurt, margarine, milk, and egg in separate bowl
4. Make a well in the flour mixture and pour in the yogurt mixture. Stir well
5. Put 1T of mixture into muffin cups/pan and add 1T of the strawberry jam to each
6. Combine leftover sugar and cinnamon to sprinkly on top
7. Bake 20-25min until the top is lightly browned


Serving Size: makes 12 regualr-sized muffins
