This is really is a whole meal, no need to add extra sides!


Number of Servings: 6

Ingredients

    2 chicken breasts (cooked and chopped)
    4 servings cooked brown rice (2 cups uncooked=4 cups cooked)
    1 can corn, drained and rinsed
    1 can black beans, drained and rinsed
    .5 cup low fat yogurt (sour cream works too)
    .5 cup salsa
    1 cup reduced fat Mexican blend shredded cheese

Directions

Cook chicken and rice first (or use leftover previously cooked).

Once all ingredients are cooked, mix all together in a bowl and transfer to a baking dish. Sprinkle a bit of cheese on top. Bake at 350 for 25 minutes.

Serving Size: Makes 6 large servings
