Introduction

Ingredients

    1 giant butternut squash, peeled and cut into short planks

Directions

Preheat oven to 425F

Peel your squash. Place in microwave and cook on high for 6 or so minutes. Remove and once cool enough to handle, carefully cut off both ends. Cut squash in half. Scoop out seeds and discard or save to roast. Cut each half into planks, then cut each plank in half lengthwise and then cut each smaller plank in half thickness wise so you have managable size pices.

Place planks on foil lined, cooking sprayed baking sheet. Also, you may want to toss fries with lemon juice for a little kick.

Bake 45 - 60 mintues or until tender and toasty.

Serve immediately.
