Ingredients

    8 Oz. Roast Pork Loin Diced
    4 Tbs. Salsa
    4 Tbs. Ground Cumin
    2 Cups 2% Mexican Four Cheese Blend
    4 Whole Wheat Low Carb Tortillas
    4 Tbs. Fat Free Ranch Dressing

    Sauted onions and peppers can be added if desired.

Directions

Heat skillet and spray with cooking spray. Add diced pork, salsa and cumin. Heat thoroughly. Heat griddle and spray with cooking spray. Spread 1 Tbs. of Ranch dressing evenly on tortilla. Place on hot griddle. Add cheese and pork mixture. When cheese melts, fold in half and plate. Repeat until all ingredients have been used.

    Incredible!
    I used low salt stewed tomatoes and onion in place of the salsa. The leftover pork I used was was already spicy from hubbys spice rub. This was DELICIOUS!!! - 7/30/12
