Ingredients

2 T Patak's Original Vindaloo Curry Paste
6 chicken legs, thawed
Red plum jam, on the tart side
1/2 Cup H2O
Directions
Can also be made with boneless, skinless thighs, or other meats.

Mix the other ingredients in a bowl till they are a good BBQ sauce consistency. Pour it over the chicken and then roll the pieces around to cover them well.
Spray the back of a foil sheet with non-stick spray. Cover the chicken, either use a pan with sides high enough to keep it from touching the chicken, or carefully arch foil over the chicken legs and seal around the edges.
Bake at 350 for 45 min, remove cover and baste chicken then let brown for fifteen min at 400.
Serve over brown rice.
