Introduction

These will surprise you! YUM! These will surprise you! YUM!
Number of Servings: 6

Ingredients

    1/3 cup Splenda
    1/4 cup olive oil (surprisingly good)
    1 egg (large) or equivilant of Egg Beaters
    3/4 cup mashed bananas
    1/2 teaspoon vanilla

    1/2 cup whole wheat flour
    1/2 cup oats (I used Quick or Old Fashioned) (I've even used Uncle Sam's cereal and it turned out great...gives ya a good cleaning though)
    2 Tablespoons flax meal (ground flax)
    1/8 teaspoon baking soda
    1/4 teaspoon salt
    3/4 teaspoon baking powder
    1/4 teaspoon cinnamon

    1/8 cup of chopped walnuts (or more,more,more)

Directions

Preheat oven to 375 degrees. Spray muffin pan with cooking spray (makes 6 muffins)

Blend olive oil and Splenda together, Add all other wet ingredients and blend.

Add dry ingredients and blend until moistened. Add walnuts gently at the end.

Pour into muffin tins (or muffin liners). Bake about 25 minutes until toothpick comes out clean. (Depends on your oven, of course)

These are so good it's hard for me to eat just one.
