Introduction

Soaking the nuts in salt water before you roast them serves two purposes! First, it makes them very sweet because it removes some of the tannins and the corky bits that can make them slightly bitter; second, it gives them a little bit of a salty flavor and keeps them from drying out too much while they roast. Ingredients

    1 lb. pecan halves
    1 T. salt, divided
    2 tsp. smoked spanish paprika
    1/2 tsp. chili powder
    1/2 tsp. ground ginger
    2 tsp. butter

Directions

Preheat oven to 350 deg. F.


Place pecans in medium bowl. Sprinkle with 1 tsp. salt. Fill bowl with lukewarm water to cover and soak for 5 minutes or so, stirring occasionally. Drain and repeat two more times. Drain very well and spread pecans in single layer on baking sheet.


Combine paprika, chili powder, and ginger till well mixed. Sprinkle evenly over nuts. Stir to coat well. Bake nuts for 20 minutes, stirring with a rubber spatula every 5 minutes. Watch carefully so nuts don't burn!


Remove from oven and immediately stir in butter till nuts are well coated. Cool and store in airtight container. Makes 16 servings (1 oz. each)
