Ingredients

    2 1/2 c brown rice flour
    1 tsp baking powder
    1/2 tsp baking soda
    1 tsp salt
    2 cup whole milk or buttermilk
    2/3 c oil (veg or coconut)
    2 eggs
    1 Tbsp sugar or sugar substitute (opt.)
    1/2 tsp vanilla

Directions

Combine all dry ingredients. Add all remaining ingredients and let the batter sit for 30 minutes. Cook in a waffle maker.

    Incredible!
    These were amazing right off the grill. With maple syrup & berries.
    A few changes: as I only had 2 c Br rice flour I added 1/2 c white rice flour & used 21/2 c almond milk to make it dairy free. I used 1 tsp maple flavouring instead of vanilla and added a few chopped pecans while cooking. Yummy!

    Not bad....I didn't wait the full 30 minutes, but after 20 or so started cooking. Texture ok though heavier than flour. Vanilla taste was stronger than I like, but I had real vanilla and might have put a little too much in. - 9/28/14

    I was skeptical when making these as it was my first foray into gluten-free cooking. At first they smelled funny because of buttermilk, but after sitting the required 30 min... OMG they were awesome! My boys-3 and 5- loved them and my husband said they were tasty( high praise as he's no waffle guy) - 10/30/12
