Ingredients

    1 cup Butter, unsalted
    2/3 cup Sugar
    1 Large Egg
    2 tbsp Honey
    1 tbsp Fresh Basil
    2 tbsp Lemon Juice
    1 tsp Vanilla Extract
    1/4 tsp Almond Extract
    3 cups Flour
    Optional: sugar to sprinkle on top

Directions

Preheat oven to 375 degrees. Beat butter in a large bowl with an electric mixer on medium speed for 30 seconds. Add the sugar. Beat until combined, scraping side of bowl occasionally. Beat in egg, honey, basil, lemon juice, vanilla, and almond extract until combined. Beat in flour slowly until completely combined.
Shape dough into 1 inch balls then roll out before placing on an ungreased cookie sheet. Sprinkle with sugar then bake for 6-8 minutes until bottoms are light brown. Cool on cookie sheets on wire racks for 1 minute. Transfer to wire racks to cool completely.

    Very Good
    I used my garden fresh basil, but made only 3 dozen. I baked them longer and sprinkled powdered sugar on top after baking. I also used salted butter in the batter and baked them on parchment paper. I taste basil more than lemon in the finished product. - 8/23/20

    I freeze them in little ziplocs...two or three to a baggie then only defrost them when I want some...keeps me from eating all of them in one shot!
