Ingredients

    2 Organic avacados, cut in into pieces
    1 cup red quinoa
    1 medium tomamto cut into pieces
    1/4 cup diced red onion
    2 fresh basil leaves, chrushed
    (Dressing ingredients:)
    1/3 cup organic extra-virgin olive oil
    1/4 teaspoon cayenne pepper
    1 garlic clove, minced
    juice of two limes
    sea salt and pepper to taste

Directions

In a small saucepan, bring 2 cups of water to boil and add rinsed red quinoa. Cover and simmer for 15-20 mins or until water is absorbed. Cool and set aside.
Mix the dressing ingredients together in a small mixing bowl. Mix all the other ingredients together in a large mixing bowl and then add the cooled quino. Toss with the dressing. Chill & serve
