Ingredients

    1# dry lentils
    1 lg. onion, chopped
    1-10 oz. pkg. frozen chopped spinach, thawed and drained
    2-3 cloves garlic, minced
    1-15 oz. diced tomatoes in juice
    1 Tb. olive oil or ghee
    1 Tb. curry powder
    1 tsp. cumin seed
    1 tsp. turmeric
    1 tsp. salt

Directions

Heat olive oil in soup pot; add lentils and sauté until lightly browned. Add onion and garlic and sauté until onion is translucent. Add spices and sauté one minute. Add tomatoes and water to cover, simmer till lentils are tender. Add spinach and cook another 5 minutes. Serve over rice and topped with plain yogurt. Serves 6.
