Introduction

Ingredients

    1 large onion peeled and hopped
    3 med-large carrots scraped and chopped
    1 large stalk celery cleaned and chopped
    2 TBS olive oil
    2-3 tsp garlic powder
    2 1/4 cups (1 lb) dry green lentils rinsed and picked over
    4 cups (32 oz) vegetable broth
    Bouquet garni (see instructions)
    8 cups (approx 1 lb) swiss chard cleaned and chopped

Directions

Saute chopped onions in oil in large stock pot until softened and translucent. Add carrots and celery and saute for 5 minutes or more until becoming tender. Stir in 3 tsp garlic powder, vegetable broth, and lentils. Make a bouquet garni: Add 1 parmesan rind, 2 bay leaves and a sprig or two each fresh parsley and thyme or use dried herbs to a piece of cheesecloth - tie shut. Add this little package to the soup mixture. Bring to boil. Cover and lower heat; simmer for 45 minutes. Uncover and add the swiss chard, stirring down. Simmer for 5 more minutes.
