This is so easy. You can ramp up the veggies by adding more, or add cauliflower or eggplant. We like to eat it over brown rice. Ingredients

    Chicken
    Oil
    Onion
    Tomato
    Bell Pepper
    Carrot
    Water
    Garam Masala curry paste

Directions

Dice chicken. Add oil to pan and saute chicken until brown on one side. Turn chicken over, add vegetables, saute until chicken is done. Add water and garam masala paste, bring to a boil, simmer for 20-30 minutes, until sauce slightly thickens..
