Ingredients

400gr peeled, cooked beetroot
100gr bertolli olive spread
200gr plain chocolate 70%
1tsp vanilla extract
250gr golden caster sugar
3 eggs
100gr rice flour
25gr cocoa powder
Tips
If you put a knife or skewer in to test when cooked, it will be very slightly gooey.
Directions
1. Put beetroot in food processor (discard juice)whizz until finely chopped. Melt chocolate and bertolli together in microwave aprox 2mins on medium, add to beetroot and whizz again until smooth.
2. Heat oven 180c/160c fan gas4. Line and grease baking tin.
3. Whisk the eggs and sugar and vanilla together until thick, pale and foamy (about 2 mins).
Fold the beetroot mixture into the egg and sugar. Sift in the flour and cocoa powder, carefully fold this in.
4. Pour into prepared tin and bake for 25mins, until top springs back when gently pressed.
Serving Size: makes 25cmx25cm (12 portions)
