Introduction

Ingredients

    For crust:
    2 cups flour
    1/2 tsp. salt
    1 cup shortening
    Ice water
    For Filling:
    3 1/2 cups fresh apples, 1/4 inch slices
    3/4 cup granulated sugar
    1/2 tsp. cinnamon
    1/8 tsp. nutmeg
    3 Tbsp. cornstarch
    1/2 cup cold water
    1/2 cup apple juice
    2 Tbsp. bottled lemon juice

Directions

Combine flour and salt. Cut in shortening a little bigger than the size of peas. Gradually add ice water to form a soft dough.

Divide into two disks, wrap in plastic wrap and refrigerate for 10 minutes.

Take one disk of dough and roll into a large circle. Very carefully place the circle inside the pie pan and then add pie filling. Repeat for second disk placing on top of filling.

Peel, core and slice apples into medium bowl. Cover with plastic wrap and microwave on high for 5 minutes.

Combine sugar, cinnamon, nutmeg, and cornstarch in medium saucepan. Add water, apple juice, and lemon juice. Stir and cook on medium heat until thick and bubbly (angry!).

Add drained apple slices Put into pre-made unbaked pie crust. Cover with top crust and seal edges well. Prick and decorate to crust as desired or make a lattice top. Brush lightly with milk, avoiding crimped edges, and sprinkle with course sugar (sugar in the raw).

Bake at 400 degrees for 30-40 minutes until golden brown.

Serving Size: makes 8 slices
