Ingredients

    2 C grain (amaranth, millet, quinoa or all three)
    1/4 or 1/8 tsp curry powder
    4 C vegetable broth
    1/4 C sun dried tomatoes (not in oil)
    1/2 C purified water
    1/2 C shredded zuccini
    1/2 C summer squash
    1/4 C minced red bell pepper
    1/4 C green onions
    salt to taste

Directions

Toast grain + curry, add broth. Soak sun-dried tomatoes in 1/2 C boiling water 15 min. Shred or mince vegetables, steam-fry in tomatoe water. Add vegetables to grain.

Serving Size: makes 9 3/4-cup servings
