Ingredients

1 cup organic unsweetened applesauce
1 15.5 oz can black beans
1 1/2 cups old fashioned oats
1 cup Navitas Naturals cacao powder
2 tsp baking powder
1 tsp salt
1/2 cup turbinado sugar
1/2 cup xylitol
2 eggs
1/4 cup coffee
1 tsp vanilla
Directions
Preheat oven to 350.
In food processor, grind oats and turbinado until it's flour-like. In a medium bowl, mix oat mixture, cacao, baking powder and salt. In food processor, blend beans, applesauce and coffee until smooth. In a large bowl, use a mixer to blend eggs and xylitol until light and foamy. Add bean/applesauce mixture and vanilla to egg mixture. Beat until combined. Add oat/cacao mixture all at once. Blend on low until moistened, then on medium high for 30 seconds until smooth. Pour into greased mini loaf pans--makes 10 loaves.
