Ingredients

    .25 cup almond meal or flour
    2 Tablespoons flax meal
    .5 Tablespoon sliced almonds
    2 teaspoons equal or other no calorie sweetener
    pinch of salt
    1/2 to 1 teaspoon of baking powder
    1 teaspoon vanilla
    1 large egg
    2 tablespoons of unsweetened Almond Breeze or liquid of your choice
    1 teaspoon cinnamon (optional)

Directions

Whip it all up in coffee cup sprayed with butter flavor Pam (or any non-stick spray). Microwave uncovered for about 1 minute and 30 seconds depending on your microwave.
Let it cool for a minute and loosen edges with a knife. Flip cup over onto a small plate. Allow to cool for a few minutes and top with sweetened cream cheese or butter if you like. Also good with sliced almonds sprinkled on top.
