Ingredients

    2 tablespoons olive oil
    40 oz lean ground turkey
    2 cps chopped onion
    2 cps sliced carrot
    one large green pepper - chopped
    2 chipotle chilis, reconstituted
    2 cps chopped fennel bulb
    32 ozs canned cannellini beans - rinsed well
    4 cps fat free, low sodium chicken broth
    1 cp chopped scallion
    1.5 tablespoons (or to taste) cumin
    1.5 tablespoons (or to taste) ground coriander
    1 tablespoons (or to taste) ginger
    .5 teaspoons (or to taste) cayenne pepper
    1 tablespoons (or to taste) ground black pepper
    salt - to taste if needed

Tips

You can saute in the soup pot, but the moisture given off by the various ingredients will cause those ingredients to cook, but not actually to saute.

Try adding your favorite mushrooms, and/or just about any other veggie. Beer is also a great addition, as is ginger ale.


Directions

Saute ground turkey, using one tablespoon of the oil. Remove from saute pan and add to soup pot off heat. Saute vegetables in remaining oil- onions, carrots and peppers first. Then other veggies. Add to the soup pot. Deglaze pan with chicken broth. Add that to soup pot. Add remaining ingredients to soup pot. Simmer for at least an hour. Serve.

Serving Size: Makes seven "soup bowl" servings.
