Ingredients

1 tsp olive oil
1 green pepper
2 medium onions
1 garlic clove
8 oz 93% lean ground turkey
1 cup tomato sauce
1/2 cup corn
1/2 cup peas
3/4 tsp salt
1 tsp chili powder
2 cups water
2/3 cup cornmeal
Directions
Saute the pepper, onions, and garlic in olive oil until softened (5 min). Add turkey and cook until browned. Stir in tomato sauce, corn, peas, 1/2 tsp of salt & chili powder; bring to a boil. Reduce the heat and simmer, covered, stirring once or twice until the sauce thickens slightly (about 15 min). Transfer to 8-inch-square baking dish.
Heat oven to 350. Boil 1 cup of water with 1/4 tsp salt. In a bowl, whisk the cornmeal into the remaining 1 cup water. Slowly pour moist cornmeal into the boiling water, stirring constantly with a spoon until the mixture comes back to a boil. Reduce the heat and cook, stirring constantly until mixture thickens and begins to form large bubbles (5 min). Spread over turkey so that it is completely covered; bake 25 minutes. Sprinkle with cheese if desired and bake til melted.
