Introduction

My version from the Spark menu suggestion turned into a hearty main course soup. I added chicken, changed the spices, and utilized some convenient items from the grocery store olive bar. Ingredients

    2 tsp olive oil
    3 oz onion-- roughly chopped
    1 oz garlic (from the store olive bar) -- sliced
    2/3 cup wild rice
    1 can (15oz) white beans, drained
    2 cups water
    1 tsp garam masala spice
    1/2 tsp smokey type red chile powder
    1/2 tsp red chile powder
    1/2 tsp dry marjoram
    1 cup breast meat from a previously roasted chicken
    4 oz herbed mozzarella (from the store olive bar)

Tips

I've used the full-fat mozzarella numbers for calculating the recipe as I have no idea what sort the little spiced mozzarella balls from the olive bar actually are... except yummy!

I used Penzey's brand "Punjabi style" masala mix. Every brand is a little different. You can substitute your favorite chile or paprika powders. I like to combine a plain hot with a smokey type.


Directions

Warm the oil and gently cook the onions & garlic until the onions become mostly transparent. Add canned beans, water, rice, and spices. Bring to a boil then reduce to a simmer. After 40 minutes add shredded chicken and cook a further 20 minutes.
