Introduction

1 lb bacon
1 med onion cut in thin slices
2-3 cloves garlic diced fine
2 1 lb.12oz can diced tomatoes
2 c. water
2 c white cooking wine
2 c raw cubed potatoes
1 tsp. paprika
2 tsp. basil
2 tsp. thyme
1 tsp. salt
2 lbs fresh fish
parsley flakes

Ingredients

    1 lb bacon
    1 med onion cut in thin slices
    2-3 cloves garlic
    2 1lb. 12 oz. cans diced tomatoes
    2 c. water
    2 c. white cooking wine
    2 c. raw cubed potatoes
    1 tsp paprika
    2 tsp. basil
    2 ts thyme
    1 tsp. salt
    2 lbs fresh fish
    parsley flakes



Directions

Cook bacon, onion, & garlic in large pot till cooked and onion transparent. Drain if desired. Add tomatoes, water, wine, potatoes, paprika, basil, thyme, and salt. Simmer in covered pot for 1 hour. Add fish and simmer 5 min or till fish flakes easily. Add parsley to flavor. May be topped with Parmesan cheese.

Serving Size: makes 18 1 cup servings
