Introduction

Number of Servings: 8

Ingredients

    1 large onion, chopped
    1/4 cup olive oil
    4 tsp stone ground dijon mustard
    2 tblsp dried sage
    2 cloves garlic
    1/4 tsp salt
    1/4 tsp pepper
    2 tblsp Worchestershire sauce
    1 lemon
    4 tblsp fresh sage leaves, chopped
    1 package uncooked turkey italian sasage
    8 chicken thighs, skinned and extra fat removed
    4 cups quartered small red potatoes

Directions

Combine oil, mustard, dried sage, worchestershire, juice of the lemon (save pulp and rind), salt and pepper in a large bowl, add in the cleaned thighs, and slosh around to cover all surfaces with marinade.
Let this sit out while you preheat oven to 425 and prepare the rest of the ingredients.
Cut lemon remains into sections, chop onions, quarter potatoes, cut sausages into halves, and mince fresh sage.
When the oven is ready put the chicken and its marinade into a large deepsided pan, lay the sausages around the chicken pieces, add onion next, then potatoes, and top with sections of lemon and the fresh sage.
Cook for 30 mins then turn sausages over and stir potatoes to get juice on them. Cook another 30 mins or until potatoes are done.

Serving Size: makes 8 servings of 1 thigh, 3/4 sausage, and 1/2 cup of potatoes
