Introduction
This is a decadent treat. I make it for people at Christmas & try not to eat too much, it's almost like candy! If you let it cool overnight covered, you can cut into these small pieces which pack nicely into tins for gifts...and don't have too many calories each! This is a decadent treat. Ingredients
-
1 cup whole wheat pastry flour
1 1/3 cups all-purpose flour - separate out the 1/3 cup
2 cups old fashioned oats
1 cup packed brown sugar (or Splenda brown sugar blend)
1 tsp. baking soda
1/4 tsp. salt
1 cup (2 sticks) melted butter (I use half I Can't Believe It's Not Butter)
2 cups (12 oz.) semi-sweet chocolate morsels
1 1/2 cups chopped toasted walnuts
1 cup (12.25 oz. jar) caramel ice cream topping - I used fat-free
Tips
I listed cooking time for the second segment as 25 minutes but my oven is a bit slow - if yours is faster, try 20 minutes. They should be a nice medium-brown.
Directions
Combine 2 cups flour, oats, brown sugar, baking soda, salt in a large bowl.
Add melted butter, stir until all is moistened.
Reserve 1 cup of this crumb mixture; press remaining mix into bottom of ungreased 9x13 inch baking pan.
Bake at 350 degrees for 15 minutes or until lightly browned/puffy. Don't overbake or bars will separate when done.
Toast and chop walnuts while base is baking.
Remove from oven; sprinkle with morsels and walnuts. Combine caramel and 1/3 c. flour in small bowl, drizzle over the rest. Sprinkle with reserved crumb mixture.
Bake at 350 degrees for 20-25 minutes or until browned.
Cool thoroughly in pan before slicing.
Serving Size: Makes 30 bars
