Ingredients

    1 cup almonds
    1 cup walnuts (I use pecans)
    10 large medjool dates, pitted
    2 pinches salt
    1/4-1/2 tsp peppermint extract
    1 1/2 tsp vanilla extract
    1 tsp cinnamon
    1/2 cup shredded, unsweetened coconut
    3 tbsp cacao powder
    1 tbsp honey

Tips

For an easier option, push into an 8x8 silicone pan. Place in freezer for 30 minutes & cut into squares. You can top with cinnamon, shredded coconut, or cacao nibs (or all 3!)


Directions

In the food processor, process nuts to powder. Add dates & blend until sticky. Add the remaining ingredients & blend. (Adjust honey & peppermint to your liking.)
Using your hands, roll into balls, then roll in cinnamon, shredded coconut, or cacao nibs. Store in refridgerator or freezer for freshness.
