Ingredients

    1 fennel bulb
    1 apple, diced (skin on is okay)
    2 oranges, peeled and cut into bite-size chunks
    1/4 cup dried cranberries
    1 Tbsp. red wine vinegar
    1 Tbsp. olive oil
    Dash Salt and Pepper

Directions

Thinly slice the fennel bulb. Add chopped oranges, diced apples, and dried cranberries. Stir together the red wine vinegar and olive oil. Pour over the fennel mix and stir. Add dash of salt and pepper to bring out flavors.

Serving Size: Make about 8 1/2 cup servings
