1 med. yellow onion, small dice
1 carrot, small dice
1 bunch kale, torn into bite-sized pieces
1 bay leaf
1 tsp garam-masala
1/2 tsp cardamom
1/2 - 1 tsp cayenne, depending on how spicy you like it
7 sprigs of thyme, whole
1 tsp chicken base (or one chicken bouillion)
2 tbsp oil, (olive, canola, peanut... doesn't really matter)
6 - 8 cups water (plus more if necessary)
salt and pepper
