Introduction

Sharing so my husband has access to the recipe for tracking. Adapted from Emeril Lagasse recipe. Using what I had leftover in my fridge from Christmas in terms of meat. Ingredients

    Olive Oil, 1 to 2 tbsp (I used about 1.5, eyeballed)
    Onions, raw, 1 cup, chopped
    1 pound Black-eyed peas, soaked over night
    Swanson Chicken Broth 99% Fat Free, 4 cup
    Garlic, 4 cloves (to taste)
    Cured Ham, 1 cup
    Turkey (dark meat), 1 cup, chopped or diced
    Salt & Pepper to taste
    Thyme, fresh, 2 tsp
    Bay Leaf, 1 to 2 leaves

Tips

Serve over 1/2 cup rice (this is one time I go from white over brown), and ideally with dark greens and cornbread.Can add even more veggies like celery and/or bell pepper. Also could add something to add heat.

To make it vegetarian, use veggie broth.


Directions

Saute onion and garlic in olive oil for a few minutes. Then add meat. Saute for a bit longer. Add broth and peas and seasoning. Bring to boil. Reduce to simmer, cook about 40 minutes, stirring occasionally.

Serving Size: Makes 10 one cup servings
