Ingredients

    4 chorizo links, out of the casing
    1 small onion, finely diced
    1 medium red pepper, finely diced
    1/2 cup shredded cheddar jack cheese
    10 eggs
    1/2 cup nonfat milk
    1 tbsp oregano
    2 tbsp unsalted butter

Directions

In a skillet, cook onions and butter to caramelize the onions. When onions are translucent add red peppers. Add chorizo and brown.

In a separate bowl whisk together eggs, milk, oregano, and cheese. Add chorizo, bell pepper, and onion mixture.

Pour into muffin top pan and bake at 350 for 12 minutes.

Serving Size: makes 12 eggies
