Introduction

Ingredients

    1 cup liquid egg substitute
    2T heavy whipping cream (can be omitted)
    1 (9 oz) pkg Green Giant frozen spinach, no sauce
    1/4 tsp nutmeg
    3/4 cup red bell pepper, chopped
    3/4 cup onion, diced
    1 cup Kraft Italian five-cheese, shredded

Tips

I recommend using a dark, no-stick muffin pan and cooking the quiches at 325 degrees for 30 minutes.


Directions

Preheat oven to 325 degrees. Thaw and drain spinach, chop/dice bell pepper and onion. Combine liquid egg substitute with heavy whipping cream, set aside. Sprinkle nutmeg over spinach and mix with bell pepper and onion. Add to egg mixture and stir in cheese. Separate evenly among six jumbo-size muffin wells.

Serving Size: makes 6 "jumbo muffin-size" servings
