Ingredients

    4 x skinless and boneless chicken breasts
    12 x slices chorizo
    125g ball of mozzarella (cut into 4)
    8 x basil leaves (fresh)
    1 x medium egg (beaten)
    50g white breadcrumbs (preferably fresh)
    1 x tbsp olive oil

Tips

I believe this recipe came originally from a Waitrose recipe card, but works exceptionally well for any kind of stuffing you wish to put into chicken breasts so be creative!


Directions

Preheat oven to 200°C (gas mark 6, ~390°F).

Butterfly the chicken breasts by cutting down one side with a sharp knife and opening out flat. Place under a piece of cling film and beat with a rolling pin (or a heavy based pan) to flatten.

Place 3 slices of chorizo, one of the mozzarella quarters and 2 basil leaves inside. Season with salt and pepper before folding back over to cover the filling. Use a cocktail stick or skewer to hold both sides together.

Dip each chicken breast in the beaten egg then roll in the breadcrumbs to coat. Place the coated breasts on a baking tray, sprinkle with the olive oil and bake for 25-30 minutes (dependant on your oven), turning once during cooking. Make sure the chicken is cooked through before removing from the oven.

Serve with a green side salad, or green beans and asparagus. Enjoy!
