1 Tbsp. I Can't Believe It's Not Butter! Light
1 cup chopped onion
7 oz. can mushroom pieces and stems, drained
2 cups Heart Smart Bisquick Mix
1 cup almond milk, unsweetened
2 Tbsp. yellow mustard
2 egg whites
8 oz. package thinly sliced cooked roast beef, chopped
4 slices baby Swiss cheese
Directions
Preheat oven to 350 degrees. Spray an 8 inch square baking dish with cooking spray.
Melt butter in a large frying pan over medium heat. Add onion and cook for 3 minutes. Add mushrooms and cook for 2 minutes more. Set Aside.
In a medium bowl, stir Bisquick mix, milk, mustard and egg whites until blended. Pour half into prepared baking dish. Top with half the roast beef, all of the mushroom and onion mixture, and Swiss cheese. Top with remaining roast beef. Pour remaining batter over roast beef.
Bake uncovered 45 to 50 minutes or until deep golden brown and center is set. Let stand 5 minutes before serving.
